So, what is the difference between cocoa and cacao? Cacao is the bean from the plant in its raw, unprocessed state. It becomes cocoa after being roasted and processed in high temperatures. Unfortunately, this alters the structure of the bean, lowering the overall nutritional value.

Cacao and dark chocolate are rich in potassium, vitamin C, iron and copper, also providing sources of iron and magnesium, and packs in more calcium than cow's milk.

The antioxidant levels found in cacao and dark chocolate are similar to those of blueberries and acai berries.
